Our Sparkling Rose is a blend of all five varietals on produced o the Thomas Estate vineyard: Syrah, Pinot Gris, Chardonnay, Flora and Riesling. The production starts with a classic champagne approach, gentle whole bunch pressing, minimal extraction, cold juice settled and blended. The juice is inoculated with yeast for a long and cool fermentation to produce a crisp fruit driven aromatic wine. Six months later the wine is moved to a Charmat tank (a special Italian wine tank for producing sparkling wine), sugar and yeast are added, and the wine is refermented to produce fine sparkling bubbles. Matured on sparkling yeast lees for a further 6 months. Estate bottled May 2020.
Tasting note: Pale pomegranate effervescence. Sweet strawberry, raspberry, blood orange, orange zest and spice. The bubbles are fine and persistent, the mouthfeel is juicy and succulent with a refreshing, dry, crisp finish.
